With only nine seats and a cloud like, highly minimal interior, UNI goes in the opposite direction from the usual busy Lisbon cocktail bar. The room is tiny, conceptual, and carefully staged, yet the appeal seems to lie less in spectacle than in the intimacy of the experience and the way the menu steers guests through flavor profiles into something more personal.
