Created by José Olivas, David Rocha, and Po Tsai, it brings a Handshake trained mindset into a Roma Norte setting with a working lab behind the bar. The menu is built as a tight set of signatures inspired by different regions, so you can explore styles while the team keeps everything precise and highly drinkable. There are also a few smart bites that echo the bar’s prep work, so the food feels connected to the drinks rather than just added on.
