Wine from the area around Jerez de la Frontera in Andalusia, made mostly from Palomino grapes, usually fortified and aged in a solera system. Fino and manzanilla age under a layer of yeast called flor and stay pale and dry; oloroso ages without it and turns darker and nuttier.
